It was a few days ago when my sister-in-law posted a drool-worthy photo of their dinner – Garlic Shrimp or Gambas al Ajillo – on Facebook. It looked so enticing that I had this urge to make it too. Gladly, we had shrimp. Unfortunately, I found out after checking for recipes online that I didn’t have all the ingredients needed and it was too late to go to the grocery store and grab the stuff. When times like that happen, I make use of what I have. The girl scout in me. Wink!
Most of the recipes online are spicy. I don’t like anything spicy so I skipped the chili red pepper flakes although we had that. It is one of my husband’s favorite spices. He loves it on top of his pizza.
Below is my own version of Gambas al Ajillo. I’m not really that creative or the best of cooks, but I do my best. It turned out good, by the way. That was the reaction from my two boys, better known as my husband and son. Or maybe they just didn’t have any other option but to say yummy?
Garlic Shrimp
Ingredients:
1-1/2 tablespoons olive oil
6 clovesgarlic, finely minced
1 pound shrimp, peeled and deveined
3 tablespoons lemon juice
1/4 cup chopped red bell pepper
1/3 cup chopped parsley
salt and pepper to taste
Directions:
1) Heat olive oil in a pan.
2) Saute’ garlic until golden brown.
3) Place the shrimp. Cook until shrimp begin to turn pink.
4) Stir in lemon juice and red bell pepper.
5) Season with salt and pepper.
6) Stir in parsley.
7) Serve hot.
I love seafood and this Spanish food is one of my favorites now because it’s not only delicious, it’s so easy to prepare too.
