Thank God it’s Friday! I guess you are exclaiming the same. But wait…after realizing that we have a hectic weekend ahead of us, I am not sure if I should really be happy about that because when Saturday comes we’ll not have a chance to even catch our breath! Just kidding. I am actually excited for this weekend to come and one of the reasons you will find out on Monday here on the blog.
Until on Monday then. Today, let us drool and be enticed first. I am so excited to share with you this dish that I have loved since the first time I tasted it. This is one of my late mother-in-law’s delicious recipes. My husband loves this dish a lot and he is always the one who prepares it whenever we are craving for it. It was actually the first thing he attempted to cook when he went through his Mom’s recipe box and it came out perfecto. It is so easy and quick to prepare but for his love of this dish, he always volunteers to do it himself even though he’s tired from work. He is probably adding a magic ingredient that he doesn’t want to share with me. Hee-hee.
So for you guys, I’m sharing with you today my mother-in-law’s meatloaf recipe.
June Bug’s Meatloaf
Ingredients:
1 lb. ground beef
1 egg
3/4 cup chopped green or red bell pepper
may add chopped garlic, garlic powder, oregano or hot sauce
Topping:
1 can (163 ml) tomato juice
2) Pour milk over bread crumbs or oatmeal or saltines. Let soften well before mixing everything together.
Topping:
1) Warm tomato juice.
2) Pour warm tomato juice on meatloaf.
It wasn’t the first time that I’ve tried meatloaf. The only difference was, the meatloaf that I’ve tried before back home was in a can. Nothing beats home-cooked meals, right? Maybe if I’m lucky, Hubby will be up to cooking this for Sunday dinner to help us recover from our busy weekend. Here’s hoping! (“,)

I loved meatloaf when I was a child, and my mom made the best meatloaf! I’m now a vegetarian and have been for years, but it’s certainly one thing I miss.

I’ve never heard of oatmeal in a meatloaf. What a great way to get the oats in the family!!! 🙂
We haven’t tried using the oatmeal though. We’ve always used bread crumbs. But I’m really interested to try it one of these days.

I don’t think they’re similar. They almost look the same though. There’s sauteing done in morcon. Not in meatloaf.
