Other than Ginisang Monggo or Sauteed Mung Bean, here’s another favorite simple Filipino dish of mine, Ginisang Ampalaya. Ampalaaya or bitter melon is a kind of vegetable that is very popular in the Philippines. It is often used in many different Filipino dishes including stew and soup. And it speaks so much for its name. It is bitter in taste.
I used to hate this vegetable when I was a kid because of its taste. Now, it is one of my favorite vegetables, and the Ginisang Ampalaya or Sauteed Bitter Melon is one of my favorite breakfast meals to make. It is quick and simple to prepare yet full of nutrients. It is low in fat, but provides you with the protein and carbohydrates that your body needs.
I’ve never seen this vegetable in the U.S. supermarkets, so I was more than delighted when I first saw it at our local oriental store.
These are the only ingredients that you need. Well, the cooking oil too, of course and some salt and pepper. See how I cut the ampalaya? Cut the whole ampalaya in half first then clean out the seeds. Then cut it into thin slices as shown above.
It only takes about ten minutes to cook this delicious and healthy meal. And the best thing to do is eat it with rice. Well, that’s just me because I love rice, but you can actually eat it without rice too.

I would probably like bitter melon. I’ve never had it, but it looks really good. I can think of several foods I didn’t like when I was little and now they are my favorites.

I like this dish despite the sour aftertaste. I think I got used to it growing up and I had grown a fondness for it. Interestingly I haven’t prepared this yet because it is so difficult to find the bitter melon veggie in the store! Hopefully I can make it soon! Thanks for sharing your recipe!
