Sausage and Potato Frittata has become one of my favorites among the many different cuisines that I’ve tasted other than my own Filipino food. I’ve always loved omelet and Frittata makes it more tastier by adding meat and vegetables in it.
The first time I’ve tasted Frittata was in the hotel where we stayed at during our Atlanta vacation in the summer of 2012. It was my chosen breakfast for all those days that we were in that hotel. It was just so good. That’s when I decided to search for recipes online so I could make it here at home. The one that I’ve recreated has a different taste than that of what I tasted at the hotel (guess they had a secret ingredient), but nonetheless, it was still good.
Over the time that I’ve been cooking frittata, I came up with a simple recipe using few ingredients, but still delicious. I actually figured this out after thinking of what to do with our leftover Kielbasa sausage. The best thing about this dish is you can actually add anything you want – from leftover meat to the kind of vegetables you have available.
Here’s my two most important ingredients – sausage Kielbasa and red potatoes.
Our son loves sausage so this is one of those dishes that you don’t have to talk about eating all that’s on his plate because the plate is clean before we know it. 🙂 He can be picky you know.
We love cheese so I top it with a lot of shredded cheddar.
Did you know that Frittata is Italian for “fried?” It is a Croatian dish though and not Italian.
There’s a lot of different Frittata recipes online, but this is my simple way of doing it.

We make this all the time. In fact my grandmother taught me how to make it. We add corn to ours. I imagine there are many variations. It is SOOOO good! In fact we planned to have this for dinner tonight! Recommended everyone try this.
