I grew up eating home-cooked meals and seeing my mom cook or bake everything from scratch. We did eat out or bought food from restaurants from time to time or had canned goods occasionally, especially on busy days, but that was very seldom. That’s why I prefer home-cooked meals more than anything and when it comes to baking, I also prefer baking from scratch.
I haven’t baked in a while though. It’s the hubs who always bakes brownies like the delicious Peanut Butter Brownies around here. The last time I baked was when I prepared one of my favorite Filipino desserts, the Leche Flan, which I think I haven’t shared here yet. But I’ve missed the Filipino desserts so much that one of my friends actually convinced me to try this dessert mix that you can prepare out of the box.
Bibingka. or Rice Cake, is one of the most popular Filipino desserts in my home country. The traditional way of preparing this dessert is very time-consuming. From the list of raw ingredients like coconut milk which was usually freshly grated from coconut fruit, to the use of banana leaf as pan liners, and the use of preheated coals in an oven. It takes cooking skills to prepare this dessert traditionally and I certainly don’t have the skills so we preferred to just buy it freshly made from the store back home.
But although I’m not a big fan of cake mix in boxes, I am still thankful for this Bibingka mix in a box. Honestly though, I’d seen this in the Asian store shelf since I got here in the U.S., but it didn’t appeal to me at all. Like I said, I’ve always preferred the traditional way of cooking or to buy goodies that were cooked from scratch, until my friend from Michigan tried it and told me how delicious it was. That finally convinced me to give it a shot to satisfy my cravings.
And it wasn’t bad at all. The taste was different from the Bibingka that is cooked the traditional way, but it was still delicious; even my husband and my son liked it. I thought I would share it with you here because you might want to try it too. I baked it using the oven, but you can also bake it in an oven toaster.
The box is consist of two 250 gram packs and you can make two 8″ pans of Bibingka in each pack. I believe you can get this box from any Oriental store. For each pack, you will also need these things below. Just double the amount if you want to bake both packs at once.
- two 8″ round pans
- wax paper
- 1/2 cup sugar
- 3 pieces eggs
- 4 tablespoon butter
- oil to grease the pans
Bibingka is slightly sweet in taste and it has a soft spongy texture. The husband compared it to his mom’s white pound cake.

Thanks so much for posting this. When I lived in Hawaii, we ate this all the time. Filipino co workers would bring them to work every Friday. I’m sure this box will not taste as good, but I will try it.

I do not like rice cakes. I tried them once when I was dieting. Yuck! This, on the other hand, looks like it’d taste way better than the rice cakes I had.

I’ve never had these before. My son has celiac disease and my wife cannot have corn or gluten. This would be something they could possibly both have. We’ll have to check it out.
