And how lucky can anybody get? We’ve had not just one special game day as of late, we’re going to have two within one week’s time. Unfortunately, the first one this past Monday, Alabama VS. Clemson, didn’t come out the way we wished. Though not die-hard Clemson fans – we love our University of North Carolina Tar Heels – they are just an hour’s drive away from us and it would have been awesome if they’d won the national championship for the Atlantic Coast Conference.
But…come this Sunday, the Carolina Panthers will be facing the Seattle Seahawks in the NFL playoffs and we’re definitely Carolina fans and we can hardly wait to see them take their first step on the way to the Super Bowl. And what better way to enjoy sitting in front of the TV watching your favorite team than to have some tasty munchies to enjoy, especially after each score on the big screen and during half time.
Before I came to the U.S., I had never eaten nachos. They’re not part of the indigenous cuisine of the Philippines. But on arriving here, I immediately learned of them because they had been a huge part of my soon-to-be husband’s menu. During his bachelor years he kept it simple, sometimes eating nachos and pizza several times a week, much to the chagrin of his Mom who told him he wasn’t eating nutritiously.
And I immediately put a stop to that after we married because I became the cook of the house. Still, after having shared some of his nachos with him, I realized why he loved them, plus he took me to several Mexican restaurants, another food I’d never had in my home country, where I not only enjoyed their nachos but their delicious native food. But it was the nachos we had in the restaurants that gave me the idea to spice up his version of nachos.
So my idea of making hubby’s nachos more enticing was to add chili to them along with his favorite black olives because all he ever put on his chips was cheese. I’d also never had chili before and I’ve come to love it because we have my late mother-in-law’s chili recipe that my husband introduced me to.
And on those game nights where we were so excited to watch the game and just wanted to relax and pop a quick meal in the microwave or oven, Progresso Chili was the perfect chili to grab instead of him going through the timely process of making Mom’s chili. Along with my husband’s favorite salsa and Mexican cerveza – beer – it was truly a treat.
Here’s what you need: Tortilla chips, Progresso Chili (we like the Smoke House Pork & Beef Chili with Beans), shredded Mexican cheese and sliced black olives.
Arrange layers (as much as you want) of tortilla chips on a microwave or oven safe platter. Then top with spoonfuls of chili and shredded cheese.
Then top it off with the olives. And for those with an adventurous palate, you could add sliced jalapeno peppers or put a dash of hot sauce in your salsa.
Bake in microwave for two minutes or until cheese is melted. Serve nachos hot.

And munchies are best eaten paired with a beverage. For the nachos, the best would be a Mexican beer.

I wasn’t a huge fan of these, but my nephews loved them when I made the remixed chili! We’re having a big Superbowl party next month, so I may have to give it another shot. I love nachos so much and honestly, Progresso makes the best soup, so maybe I made it with too much of the sauce or something!

I love making Nachos as well. It is easy and fun. You can add whatever toppings you enjoy, and I always use a lot of sour cream as well.

Hmmm I didn’t know Progresso made chili. I might have to try it especially if it’s better for you than other leading brands. I also love nachos but they can been loaded with calories.
