When life gets hectic, easy to prepare dishes are my best friends. I grew up remembering having good, hot food on the table all the time, and I carried it with me now that I have a family of my own. But as you know, preparing home-cooked meals can be time consuming so I make sure I have simple, easy to prepare yet delicious and nutritious recipes on hand for those busy days.
These Italian Chicken Kabobs are one of those easy to prepare dishes, yet very flavorful and healthy. It only needs a few ingredients that are all affordable which makes it easy on the pocket.
But it could not have been more easier to prepare without using the Tyson® Grilled & Ready® Chicken Breast Strips because aside from the fact that they were already cut into strips, they are already fully cooked. We are big fans of chicken around here so I bought 4 packs.
And another great idea to make the recipe easier and quicker to prepare? Marinating the chicken with Wish-bone® Regular Italian Dressing instead of creating your own marinade.
You can easily find both the Tyson® Grilled & Ready® Chicken Breast Strips and Wish-bone® Regular Italian Dressing at Harris Teeter – in the frozen section and grocery section respectively.
I marinated the four packs of chicken with half of the bottle of the Wish-bone® Regular Italian Dressing for two hours and chilled in the fridge. You can marinate it overnight too if you wish.
After two hours, I threaded the chicken strips that I cut in half alternately with the grape tomatoes, sliced zucchini and sliced yellow squash. I only prepared three skewers, but there was more chicken and vegetables left which I saved for another day.
The husband grilled them for 15 minutes on the grill, turning them once until the other side of the vegetables were cooked. He also brushed them with the remaining Wish-bone® Regular Italian Dressing as he turned them.
