Happy Good Friday!
From youthful lessons growing up, I remember not to eat meat on Good Friday. My mom would always prepare either a fish or vegetable dish. So for today’s food post, this dish is so perfect, especially for those who are following the said belief.
I have always been a fan of broccoli: something that me and the hubs don’t have in common because he is not a big fan of the vegetable at all. He does eat it when I put it on the table, and that’s because he doesn’t have a choice. But if he would be the one to choose what I should cook, he’d for sure say “No broccoli please!” 🙂
But with my goal of preparing him healthy meals after what happened in January, although I know he doesn’t like broccoli, I decided to prepare these broccoli fritters after I saw a recipe online. I’ve always cooked broccoli in a stir-fry. So these fritters are something new. It looked and sounded delish on the recipe so I had this urge of giving it a try pronto.
Guess what? It was a surprise that the husband actually liked it. He didn’t know it would look like this. He was already envisioning broccoli florets on his plate like in the stir fry dishes I’ve prepared. He just liked to assume. I’d already prepared myself to hear his complaints and was surprised to hear compliments instead. Good boy! 🙂
He was even more surprised that they were delicious. Of course they were. Not to mention very healthy as well. These broccoli fritters are side dishes, but I made it as our main dish. The hubs paired it with his favorite mashed potatoes and I paired it with my favorite brown rice.
