Pancit Bihon {Filipino Rice Noodles} is one of the most popular Filipino dishes and is one of my absolute favorites. Back home, we usually have it for snack paired with Siopao {Steamed Buns} and a bottle of soda or have it for lunch or dinner paired with steamed rice. I hadn’t prepared this in a while though because I had not been craving for it until I saw my friend’s photo on Facebook. She was the one who gave me the recipe for this dish, but I couldn’t find it so I asked for it again and this dish was on our menu last week.
It has been a while since I shared a Filipino dish here on the blog. The last one I shared was the Nilagang Baka {Filipino Beef Stew with Clear Broth}. There was also the Pork Afritada {Braised Pork in Tomato Sauce} before that plus Pork Adobo with Eggs, Bistek Tagalog {Filipino Beeksteak}, Ginisang Ampalaya {Sauteed Bitter Melon}, Ginisang Monggo {Sauteed Mung Bean}, Arroz Caldo {Filipino Chicken Rice Soup} and Ginisang Sitaw {Sauteed String Beans}. So here’s another one to add to the list.
Like any saute’ dishes, Pancit Bihon is also simple to make. And with all the vegetables in it, not only it is tasty, it is also filling and full of nutrients that your body needs for that much needed energy.
I used to buy the noodles at the Asian store. But this time around, I checked our local grocery store for it and was delighted to see them there. The package reads rice sticks though and not rice noodles, but they basically look and taste the same.

I love that this dish has so much nutritional variety in it. It makes less side dishes I have to prepare when I cook. Is it possible to freeze this dish and eat it later? I would love to know.

This dish looks so good. I should make it for my family. I would have to use chicken instead of pork though. I will have to see if Walmart has the rice noodles if not I’ll have to get them next time I go towards the bigger city.
Yes, you could use chicken too instead of pork. And I actually bought the rice noodles at our local Walmart. I hope they have it at your local Walmart too. 🙂

We made friends with a couple from the Philippines last year and I fell in LOVE with pancit noodles and it’s many varieties.
