Happy Food Trip Friday! We made it to Friday! 🙂
Not only once, but many times, I’ve mentioned in my previous posts how good a cook my sister-in-law is. She is always the one who hosts family gatherings, and I believe I am not the only one who always looks forward to the food that she is going to prepare. My husband does too as well as my son and the rest of the clan. She always prepares a lot of food and new dishes every time. One time, she prepared a butternut squash salad. It had Brussels sprouts and walnuts in it and was really delicious. So I looked for a recipe online and came across the recipe for this roasted butternut squash salad with pearl couscous. I thought, “Why not try this because it does sound delish!”
And it was absolutely delicious! The taste was really interesting because of the combination of mustard, honey and vinegar in the dressing – something that I haven’t tried before.
The recipe called for kale and chickpeas, but other than using the kale in a different dish, both the hubs and I totally forgot about the chickpeas. Next time I prepare this dish, I’m definitely not going to forget what I forgot the first time. 😉 I also used the red onion rather than sweet onion because it was what I had available.

I think this would be perfect with anything and it’s such a colorful salad too with the kale and chickpeas in it which would be totally perfect for either spring or summer. Do you agree? 🙂

Mustard, honey and vinegar sounds like a great dressing for anything. I’m sure it is particularly interesting paired with the sweet taste of butternut squash.

I love butternut squash. I might have to give this one a try. I too would leave out the kale and chickpeas(never tried them). I would only drizzle the salad with a bit of honey too. Cranberries would be a good addition too.
