And how about some oddly shaped blackberry pancakes for breakfast today? 🙂
We love blackberries and we’ve been having a lot of them lately, from Hubby’s Quick Blackberry Cobbler which is our dessert almost every day and every night to these oddly shaped blackberry pancakes. I don’t think we’ll ever get tired of ’em. We’ll stop once the blackberries are out of season, though.
But compared to his Quick Blackberry Cobbler recipe which he got from his late mom’s collection of recipes, I got the recipe for these blackberry pancakes from a good friend. Actually, her pancake recipe calls for blueberries, but we love blackberries more so the hubs and I decided to use blackberries instead of blueberries and oh boy how good they were.
I have a confession to make though…these were not meant to be shaped oddly like these. My plan was to make the usual round pancakes, but they turned out like this. I was amused with the triangle kind of shape, but more than anything, the shape didn’t matter to me because I knew for sure that the shape wouldn’t change the taste.
So these oddly shaped blackberry pancakes were born in our kitchen which I really think is great. Don’t you just love it when great things happen unexpectedly?

I really hope you are going to enjoy this blackberry pancakes like we did. But like what my friend did, you can use blueberries instead of blackberries for this recipe. Whichever berries you want to use, I think it would still be delicious and would be the perfect pancake for that much-needed breakfast.

The one thing I miss about living in the country is all the blackberry bushes we had. I’m going to have to make these soon.
I love pancakes with strawberries and blueberries. I’ve never tired them with blackberries but I bet they taste amazing. I’d like to use raspberries too sometime.
Those pancakes looks so good. What is really strange is I bet that shape would be hard to replicate even if you tried. My kids would get a kick out of the shape!
