Happy Food Trip Friday!
It has been a while since I’ve shared a dish from my home country, the Philippines here on the blog and I am more than happy to share one of my favorite Filipino foods today, the Adobong Talong or Eggplant Adobo.
I miss the food in my home country so much and although I can’t have all the Filipino food that I want here in the U.S. because of the lack of ingredients, I am glad they have our kind of eggplant here. I can always have the Adobong Talong anytime I want!
Other than the herbs and seasoning, this dish only needs eggplant and nothing else. We use talong or eggplant in many different dishes in the Philippines, but it can be prepared in the simplest way which is the Adobong Talong.
This is the kind of eggplant that we have in the Philippines and you can only find it an oriental store here in the U.S. They are a lot thinner compared to the local eggplants that you see at the grocery stores in the U.S. And as for the taste, our eggplant has a bit of a sweet taste to it which I prefer.
We also make an omelet with these eggplants. I will share the recipe for that later.

I always eat the Adobong Talong over rice. But you can also eat it without rice if you want to.

We are big eggplant fans and always looking for new ways to enjoy it. The variety you featured is so tasty and often referred to as a Japanese eggplant here in the states.
