Although it’s been raining here lately because of the subtropical storm, Alberto, we did enjoy a lot of sunshiny and warm days before it arrived which signifies that summer is right around the corner. One of the things that we love to do in the summertime is grilling. I love making salads too, as well as pasta.
So today, I’m sharing some of our favorites. I’ve already posted these recipes here on the blog before, but in case you missed them, I’m linking all four to their respective posts so you can get the recipe if you want to give each of them a try.
Salad
Roasted Butternut Squash Salad with Pearl Couscous
Butternut squash is one of my favorites. It’s not summer yet, but my cravings for it is so high. I love it prepared this way or just roast it seasoned with olive oil, salt and pepper.
Who doesn’t love the healthy benefit that avocado brings? And it’s so versatile too. It’s not only good in salads, it’s also my favorite smoothie flavor. This one has a tangy taste to it which I really like. So good!
Seafood
If you’ve been following me for a while now, perhaps you already knew that we love seafood over here. I came from a tropical country and grew up in a city located by a bay. So there was never a day in my life that we didn’t have seafood on the table. And fresh seafood at that. A friend shared this recipe with me and it has become my favorite since the time I tried it.
Pasta
This is one of the most favorite dishes in my home country. It’s always present at special gatherings or occasions, and we have it for dinner or snack.

I don’t know if I could do the pear in cous cous, but I love the other fresh recipes. We do a lot of entertaining in the summer and it is nice to have some different ideas to try out.
