One day last week I was craving for pancit, or noodles. There is a lot of pancit dishes in the Philippines and I did not know exactly which pancit recipe specifically I wanted to eat so I browsed the internet and decided on this particular pancit recipe. That in itself can be a trying task, culling through all the recipes you can find on the internet. But I was successful in my search.
It’s called Pancit Canton and it is one of the most popular Filipino noodle dishes. They even have instant pancit canton sold in the market in packs. Although we also like the instant noodles, I have always preferred homemade. And what sold me in deciding this is the pancit that I wanted included the snap peas. I haven’t had them in a while and I almost forgot what they tasted like. LOL. So off I went and added this to on the menu for the week.

The recipe that I found was more elaborate though with more ingredients than I’d ever known could be included in a pancit canton recipe. I made mine much more simple with one kind of meat and less amount of vegetables. But trust me, it is still super delicious and it totally reminds me of this pancit canton that we bought at a restaurant back home before which truly made me feel at home.
You can also add shrimp to this dish or use pork instead of chicken. And for the vegetables, you can also add cabbage, celery and mushrooms.
If you like Chinese food, it is popularly known as Lo Mein or Chow Mein. I had it on a takeout here before from our favorite Chinese restaurant and it was good, but I think homemade is till much much better. 🙂
