Hello March!
Seems like February went by in a swirl for me. But I am not complaining because it was definitely brighter and happier compared to January. Not only because February is the most celebrated month around here, but also because Hubby got to finally go home. We missed him for more than two weeks of not being at home with us because of that event that happened in January. I am just so glad that that was over and everything is back to normal here. I couldn’t be more thankful about it. We are so blessed!
Everything is kind of back to normal here on the blog too. Although I love this blog because this is definitely one of my happy places, my mind was not into it at all when that event happened which explained the lack of posts. You can check that out in my January Recap. And although I still haven’t posted much in February, my schedule is starting to get back to normal. It was a struggle for me during those hard times. I just made sure to accomplish tasks that I needed to do and I was glad I did although my partner in crime was not here.
On the brighter side, although it is still a little chilly on some days, spring is starting to make us feel that it’s on its way. My blooming daffodils as well as the chirping birds in our yards say it all. Who doesn’t get giddy with all those things and of course, the warmer temps? But before I get carried away with all things spring, let’s look back at what we’ve shared here on the blog in the coldest month of the year.
FAMILY
For those of you who is not aware yet of that event in January and is wondering about what I mentioned at the beginning of this post, my husband had a massive heart attack and he talked about it on his post, Yea, though I walked through the valley of the shadow of death… So grateful that he was able to pass that and celebrated his birthday as well as our wedding anniversary. I always make a big deal out of birthdays because for me, celebrating a birthday is a blessing. To make his birthday extra special, I gave him a treat to one of the best restaurants in Asheville and he really loved it!
FOOD
As an Asian, I think there is no further explanation needed that I love Asian food. I was delighted to get to try new Asian ingredients from this brand and created Broccoli Beef and Tuna Spring Rolls. But I do love a lot of different cuisines too. I love trying out new dishes and so when I came across the Ratatouille recipe, I made it right away.
Our beautiful city of Asheville is known for its many different restaurants that offer delicious cuisines for different palates. Curate’ is one of them that is recommended by many and we tried it to our delight.
TRAVEL
Like I said in my previous post, it was in the middle of a snow storm when the hubs had the heart attack. But despite my emotional state then, beautiful views and scenery still never failed to brighten me. It actually boosted my mood in the short time it took me to get to the hospital on that fateful day. And I took photos of Beaver Lake while we were on our way to the hospital that Sunday morning, just a day after that scary event.
I am feeling fine now knowing that the hubs is doing okay and is now looking good.

I am so sorry to hear about your husband’s heart attack but am glad to read that he is recovering. That had to be so terrifying for you all.
I’m wishing my February including those fabulous looking spring rolls! I got to do some travel last month so that always means a good month for me.

February seemed quite challenging, but I’m glad everything is going well now for you and your family. At least you were able to have a little fun near the end, it was well deserved. I hope March will be a lot better for you!

Our February was pretty busy. I am glad that we didn’t have that much bad weather. We did get a storm and some really cold temps, but I have seen a lot worse.

I’m sorry to hear about what your hubby went through but I’m glad he’s doing good now. We are the same with birthdays, I do believe it’s a blessing and should be celebrated even in simple ways.
