Happy April Fool’s Day!
Don’t worry, I am not at all into pulling pranks on people so you are safe with me. 🙂 But can you believe it’s already April? As always, it seems like the days are flying by so quick. It feels like spring only started yesterday. But I am not going to complain because warmer temps are finally here. Or so I thought because as per the weather forecast, we are going to have snow again later this week. Umm, really? So although I’m seeing blooms everywhere, apparently, Mr. ‘Ol Man Winter is still hiding somewhere and not ready to leave yet.
Anyway, weather can be unpredictable and it could still change. So I’m not going to worry about it. I guess some, or many or maybe all of you are excited about April. I think I am too. But before I get excited some more, let’s talk about March first and here’s the recap of the many musings here on our dear blog.
FAMILY
Don’t we all just love when spring finally sprung? You do know that it could mean enjoying the outdoors more. The flower lover in me is always delighted when I see flowers everywhere like the gorgeous white blooms from those Bradford Pear trees. Can’t help but gush about ’em on Spring Arrives and My Flowers Thrive!
Spring soccer also started and we moved to a new soccer field for our practices – a beautiful place that has lots of great views to offer. Not to mention, they have a putting area so the hubs took the opportunity to putt one day.
March is also for March Madness which the husband is a huge fan of. And this year he’s especially happy since his North Carolina Tar Heels made it to the Final Four. He’s been following the tournament since he was a teenager. And I think the same goes with being a fan of Stephen King. Got him new Stephen King books on Christmas and as always, he was on cloud 9.
Easter Sunday was spent with family as usual, and was filled with good food, good conversation and fun.
FOOD
All the recipes that I shared this month were all healthy food. Like I said previously, my goal is to serve healthy meals for my family, more so after what happened to the hubs in January. I shared Avocado and Tomato Salad, Sauteed Salmon with Mushrooms and Broccoli Fritters. The good thing about these recipes was, they are all easy and quick to prepare. Try them yourself!
TRAVEL
I had this urge of going to the beach in the first week of March that was why I created a list of the Must-See Beaches in North Carolina. I was hoping that we could do it during the Spring Break, but later on I realized that it’s not good to let the hubs travel that far yet. I know he’s feeling great and he’s looking great, but I prefer to delay it for now. Better be safe than sorry, right? Summer is right around the corner anyway. We’ll save our trips for then.
The husband and I did a little trip to the thrift store though in search of a coffee table. We didn’t find one that we liked and that suited our budget, but we did have a blast exploring the huge store full of antique stuff. Like I said in that post, I felt like Joanna Gaines while checking those antique pieces one by one. 🙂

Broccoli fritters sound amazing. I’ve made lots of different kinds of fruity fritters, but I’ve never made any of the veggie variety.

I’m in WI and while they also claim it is Spring here, it does not at all feel like it. We can often see our breath still! I’m not much into reading, but Stephen King is one of my favorite authors.
March seemed to fly by so quickly. It sounds like you guys had a super busy month. I saw snowstorms coming down from Canada, hopefully, it won’t make it your way. It was chilly here this week compared to normal and we have had some icky storms with damaging hail.
Sounds you had a good month, I love your healthy food and I want to cook this for my family.
