And just like that…goodbye March and Hello April.
How did you all spend your first day of April or better yet, Easter Sunday? As usual, we spent it with great company and good food. My sister-in-law who is an excellent cook never fails to delight our tummies and she always prepares new dishes every gathering. Yesterday she made this kale side dish that was really good. I will try to recreate it soon and share it here.
March is one of my most favorite months and that’s because it is my unico hijo or only son’s birth month.
A Happy Birthday
He turned fifteen and other than wishing him a happy birthday, hubby wrote about all the adventures that he’s had since he first met him and about his life in America. And giving him a fantastic fifteenth birthday feast that he asked for was our pleasure.
Good Eats
I love bean sprouts and this beef and bean sprout stir-fry is one of my favorites. So simple to prepare with very few ingredients yet so delicious. Have you tried it yet?
Smoothies are one my favorites to have for breakfast or even for brunch or snack so I scoured the internet for some delicious looking smoothies for St. Patrick’s Day.
We love sampling a different restaurant every time we eat out. We also love checking online for must-eat restaurants when we go on road trips or vacation. If you are like us, you should check this guide to Good Eats Around the Country Recommended by Locals.
Good Reads
As always, my bookworm hubby shared some good reads that you might like to read too. Check his posts, My Irish Eyes are Always Smiling and Remembering the Good Ol’ Days.
Travel
It’s been years since we visited the U.S. Capitol, but I can still vividly remember the amazing details of that piece of art of a building. Have you been to the U.S. Capitol? The inside was just as fascinating as the outside.
Tips
Meal planning has totally been a life saver for me so I shared my tips and how it worked for me because you may want to do it too if you haven’t started doing it yet.
As parents, we know school can be tiring for our kid, especially the homework. The tips on How to Make Sure that Homework Does Not Stress Our Kids is a must-read for parents.
It was a great month!
How was your March?

I cannot believe March is already over! I feel like this year hasn’t even started yet. There’s definitely things I need to get done this month and things I want to get done! Sounds like you all had a great March! I think meal planning is a great way to go. I always do it because it saves so much money.

I love to meal plan. I usually do it on Sundays and last sunday we had guetss over, I forgot and the entire week was messed up because we didn’t meal plan. I also really like to make sure I make meals around couponing and sales. It saves so much money.

Sounds like you have a wonderful family. I did some pet sitting on Easter weekend for some canine babies while their Mom and Dad were out of town.
