In my post about the Reese Witherspoon book, Whiskey in a Teacup, I mentioned that among the recipes that she shared in her book, it is the Chicken Pot Pie that I want to try making first.
Chicken Pot Pie is one of Hubby’s favorites, but he usually just gets those that you see in the stores. I would prefer he’d eat a homemade one instead.
So with Reese’s recipe as an inspiration, I created this Chicken Pot Pie for dinner one night. But just to let you know, I didn’t follow her entire recipe. I decided to use other ingredients to make it much easier to prepare. Instead of fresh vegetables, I used the frozen mixed vegetables. And instead of using hash browns as the base, I just grabbed a store bought deep dish pie crust.
But I bet her version is delicious and the use of hash browns instead of pie crust is definitely interesting. When I am not super busy, I am definitely going to try her recipe following it word for word.
But for my version of Chicken Pot Pie, here’s the recipe if you want to try it yourself.
Ingredients
- 2 cups Rotisserie chicken
- 1 bag (12 oz) frozen mixed vegetables
- 1 medium sized onion, chopped
- 2 pie crusts (1 deep dish 9″)
- 1 can (10.75 oz) cream of mushroom soup
- 1/4 cup water
- 1 tsp salt
- 1 tsp pepper
Instructions
- Preheat oven to 375 degrees.
- Bake the deep dish pie crust for 7 – 10 minutes or until brown.
- In a mixing bowl, combine the chicken, vegetables, onion, cream of mushroom soup and water.
- Add salt and pepper and mix well.
- Pour on deep dish pie crust and cover with the other pie crust.
- Bake 45 – 55 minutes or until the top becomes brown.
- Let cool for 5 – 10 minutes.
- Serve and enjoy!
It was my first time to have prepared this dish. But it sure was delicious and I think that is the most important thing. And it met the approval of my husband and son too.
Look at those goodies. It was really delicious, y’all. And it’s going on the menu again next week.
