I am such a happy camper now that we have an Asian market here in the city that offers a variety of Filipino goods including fresh seafood. Coming from a tropical country where fresh seafood abounds, I grew up eating them and loving them too.
I have already shared dishes here on the blog that were the products of the ingredients that I got from our local Asian market which you basically can’t get from a U.S. supermarket. You can find all of those dishes in my recipe tab, the latest being the Crispy Fried Calamari.
The red snapper was one among the fresh seafood that they offer at the Asian market. I’ve never had them before, but they do look like our own Lapu-lapu fish which is known as Grouper.
So I searched online for a red snapper recipe and stumbled upon this Mediterranean Roasted Red Snapper. It looks delicious not to mention, it is so easy to make with few ingredients. But I tweaked it a little bit adding my own favorite seasoning.
Ingredients:
- 2 large whole snapper fish, cleaned and gutted
- 10 garlic cloves, minced
- 2 tsp ground cumin
- 1/8 tsp salt
- 1 tsp black pepper
- 1/4 cup dill
- 3 tsp of “Everything but the Bagel Sesame” seasoning
- 3 bell peppers, sliced into rounds
- 1 large tomato, sliced into rounds
- 1 medium red onion, sliced into rounds
- Olive oil
- 1 lemon
Instructions:
- Preheat the oven to 425 degrees F.
- Pat the fishes dry. With a large knife, make two slits on each side of the fish.
- Mix all the spices. Using half of the spices, fill the slits and coat the gut cavity of each fish.
- Stuff each cavity and slits as much of the sliced peppers, tomatoes and onions.
- Place the stuffed fish in a baking sheet covered with aluminum foil and sprayed with olive oil.
- Add the remaining vegetables around the fish then sprinkle with the remaining spices.
- Drizzle everything with olive oil.
- Bake for 25 minutes or until the fish flakes.
- Squeeze a lemon all over the fish before serving.
This was the first time that we ever tried having roasted red snapper, but we did the same thing back in my hometown. But instead we use one whole tilapia fish and sometimes one whole milkfish.
