We love seafood so I always make sure that there’s a seafood dish or two on the menu every week. That said, I always search the world wide web for new seafood recipes to try.
I was browsing for healthy seafood recipes in particular one day and came across this Garlicky Lemon Mahi-Mahi recipe. I can’t remember exactly if I’d already had mahi-mahi before, but the name does sound familiar. And since the recipe sounds delicious not to mention, it has one of my favorites, the asparagus in it, I decided to add it to the menu last week

But I made a little twist to the recipe. I don’t like spicy food at all so I skipped adding the red pepper flakes.

And here’s what I came up with.
Ingredients:
- 3 mahi-mahi fillets
- 1 lb. asparagus
- 3 tbsp. butter
- 2 tbsp. olive oil
- 4 cloves garlic, minced
- 1 tbsp. parsley
- Juice of 1 lemon
Directions:
- In a medium-sized skillet over medium heat, melt 1 tbsp. of butter then add 1 tbsp. of olive oil.
- Add mahi-mahi and season with salt and pepper. Cook 4-5 minutes or until golden. Set aside.
- Add 1 tbsp. olive oil to the same skillet and add asparagus. Season with salt and pepper and cook until tender. Set aside.
- Melt 2 tbsp. butter to the same skillet. Add garlic and cook until golden brown. Then add lemon juice and parsley.
- Add the mahi-mahi and asparagus and spoon over sauce.
- Serve hot and enjoy!

It is really super easy to make and so good. Not to forget the fact that it is healthy.
We had this served over rice. Both me and my son always have steamed rice in our meals all the time. For the hubs, only sometimes. He has mashed potatoes instead of rice sometimes.

I have never tried to make mahi mahi at home – but I have had it out before. It is great in fish tacos I know. I make shrimp all the time, so I should try this to spice things up

OK now this sounds like it would be absolutely delicious – asparagus seems like it would definitely be the perfect side for it as well.
