Among the many Filipino dishes, I believe it is the Filipino Adobo that is the most popular. As per Wikipedia, it has occasionally been considered as the unofficial national dish of the Philippines.
The Hubs has even informed me that the first thing all the people he ever meets says, when he tells them he married a Filipino is, “I bet you get to eat a lot of adobo!” So the dish is obviously known worldwide. And though it’s now known as a dish of the Philippines, the name was taken from the Spanish language and given to the indigenous cooking method of the native Filipinos that also uses vinegar. Many things in the Philippines have a Spanish influence seeing that the islands were under the influence of Spanish colonization for over 300 years.
And if you search online, there are already a lot of Filipino Adobo dishes that have been created by chefs or those who just love to cook. They gave their own twists to it which were pretty impressive.
When Hubby and I had our wedding anniversary lunch date last month, I was really surprised to see a Filipino Adobo dish on the menu. And I was delighted to the twist that they put to it. I’ve never had a Filipino Adobo Wrap before. And this dish was from our most favorite restaurant here in the city, Corner Kitchen.
The Filipino Adobo is one of the quickest and easiest dish to prepare with very little ingredients yet it is so tasty and flavorful. It can be prepared with either pork or with chicken.
Pork Adobo
I have shared a Pork Adobo recipe here before. We like it with hard-boiled eggs, but you can prepare the pork adobo without the eggs.
Chicken Adobo
Then a few days ago, I saw this new twist on a chicken adobo, it has coconut milk and honey in it. I have never tried chicken adobo with coconut milk before mush less with honey too. So I tried her recipe and it was good. You can find the recipe here.

I have never cooked with adobo and did not realize it was so important to Filipino cooking. This looks like a great seasoning for chicken or pork

The first time I had Filipino Adobo chicken was at my daughter’s wedding. It was delicious! When we came home, I found a recipe online and made it. My version was still pretty good, but not as good as what we ate at the wedding.
I love Filipino food… My favorite is chicken adobo, and stir fry noodle.
