Happy Food Trip Friday!
Can you believe that in my 40-ish years of existence in this beautiful world of ours, I’d never had chicken meatballs until recently?! That’s the whole truth and nothing but the truth. And for that matter, Hubs had never even heard of ’em. The only meatballs he’d ever had was the beef ones his mother made for her spaghetti.
I think maybe because, first, I’m not a huge fan of chicken like my boys are. I can feed them fried chicken everyday and you’ll never hear them complain.
Second, probably because I have never stumbled upon a chicken meatball recipe that is so simple to follow and also, one that sounds and looks delicious.
I did have beef meatballs a lot of times in the past and even shared my late mother-in-law’s meatball recipe here before. You may click that link out and try it yourself. It’s really good!
Anyhoo, I was blog hopping one day and came across this Baked Chicken Meatballs recipe and after reading the recipe, it sounded so good to me.
I am always on the lookout for new recipes to try because although I have no problems eating the same healthy meal regularly, my boys don’t have the same sentiments as me. Yes, they can be very picky! And let me tell you, once a recipe is approved by my picky boys, you better believe it is good.
So, when I saw this recipe, I knew I must try it. It’s been weeks since I stumbled upon it and I have already prepared it many times. I’ve been wanting to share it here, but didn’t get around to doing it until today.
If you love chicken, you should give this a try. Trust me, it is really delicious! Like always, my son and I pair it with steamed brown rice. But there were times that my son just ate it by itself.

YUM!! I’ve made turkey meatballs before when I wanted to be a little different than the traditional meatball… but I have yet to try chicken in that form. Thanks for the recipe! I’m going to try it out.
