Easy and quick to prepare with only six ingredients and yet so hearty and healthy. It doesn’t get any better than that.
This has been one of my favorite breakfast meals to prepare. I only need a little olive oil, a handful of organic greens, an egg then salt and pepper and voila! Breakfast is served.
I got this idea from a food blogger that I follow on Instagram. But she only used spinach and no arugula. I always buy a box of organic mixed greens from the store so I just added all the greens that’s in it which are baby spinach and arugula to be exact, and I’m totally loving it. It is so good!
Also, I used to season it with my favorite, Everything But the Bagel seasoning from Trader Joe’s like the one I used in my sauteed zucchini noodles, but I ran out so I just season it with salt and pepper instead. So you can actually season it with either of the two…whatever you have available. Both are delish, you know!
A Hearty & Healthy Breakfast
Here’s what you need to do if you want to give this dish a try:
Ingredients:
- 1 tbsp olive oil
- a handful of organic baby spinach and arugula (you can add more if you like)
- 1 egg
- salt and pepper to taste
Instructions:
- Heat olive oil in a small pan.
- Add organic baby spinach and arugula. Saute until wilted.
- Form the greens into a circle with a space in the middle then add the egg in the middle.
- Season with salt and pepper and wait until the egg is cooked. (I don’t want my egg well done. I like it a little runny. But it’s up to you how you want your egg done.)
- Enjoy!
There you have it. Isn’t that so quick and easy?
I usually pair this with steamed brown rice. I always prefer having rice with any of my meals. I grow up eating rice. It’s our staple food.
