Happy Food Trip Friday!
One of my favorite vegetables as a side dish is asparagus. But I have never liked it until I was an adult. And funny thing, I remember Mom’s friend who was also my Godmother back in the Philippines giving us a bunch of asparagus regularly. She worked in a company that exports asparagus all over the world. But back then, I wasn’t crazy about asparagus. And now that I’ve grown to love it, there is no more free asparagus. LOL.
Bless my Godmother’s heart. I can’t help but remember her smiles while giving Mom the asparagus. She had a bubbly personality and her laughs were always contagious. She was one of Mom’s closest friends and they both loved to laugh a lot. She passed away many years ago before Mom left us and I still remember the moment when Mom found out about her passing. It was very emotional for Mom. But they’re now together in heaven and most likely enjoying some good laughs there too.
Asparagus is so delicious and I like it oven roasted. So quick and easy to prepare with so little ingredients needed.
Oven-roasted asparagus is my favorite to pair with grilled steak with some Au Gratin potatoes added on the side.
Here’s how I like it prepared.
Ingredients:
- A bunch of asparagus
- Olive oil
- Parmesan cheese
- Salt
- Pepper
Instructions:
- Preheat oven to 425 degrees Fahrenheit.
- Cut the end part of the asparagus about 3 inches.
- Place the asparagus in a aluminum foil lined sheet.
- Drizzle the asparagus with olive oil.
- The sprinkle with salt, pepper and Parmesan cheese.
- Toss to coat.
- Bake for 15 minutes or until tender.
- Enjoy!
So easy-peasy, right?
