Anyone else eating more chikin in their household? Chicken, I mean. 🙂 My son loves chicken and he could eat chicken every single day whether fried, roasted or soup like the Filipino chicken rice soup or arroz caldo. He prefers chicken over pork and I am such a happy camper because of that.
I can’t just feed him the same chicken recipe all the time, though, so I am always on the lookout for new chicken recipes to try. The I came across a chicken sausage recipe that looks good.
After coming across that chicken sausage recipe, that was how I learned about nitrates and nitrites too. Apparently, some chicken sausages don’t have them which make them a better and healthier option which is also I like.
I found some chicken sausages in our local supermarket and the flavor that I chose was the kale and feta chicken sausage and they were really good. The recipe needed more ingredients than I prefer so I tweaked it and made mine more simple.
Simple and easy recipe yet so good. Here is the recipe for you to try.
Ingredients:
- 1 package chicken sausage, 20 oz (any flavor of your choice), cut into 1-inch pieces
- 1 medium green bell pepper, chopped
- 1 medium red onion, sliced
- 5 gloves garlic, minced
- 2 tablespoons olive oil
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
Directions:
- Preheat oven to 400 degrees F.
- Place non-stick parchment paper on a medium-sized baking sheet.
- Put sausages, peppers, onion and garlic on baking sheet.
- Drizzle with olive oil then season with Italian seasoning, salt and pepper.
- Toss to coat evenly and spread ingredients out on baking sheet.
- Bake for 45 minutes.
I always like using parchment paper or aluminum foil for easy cleanup. You can prepare this dish without using them, though. It’s really up to you.
