Pan de Coco as what we call it in the Philippines, or Coconut Bread in English, is one of my favorite breads.
I love to have it for snack. But I haven’t had it for years because I just always bought it at the bakery back in my hometown.
I have never thought of baking it because I thought it would be difficult.
Then I saw a friend on Facebook sharing the Pan de Coco that she baked. I certainly was drooling and I couldn’t take it off my mind since then.
So, I searched for a Pan de Coco recipe online, and I tried baking some a few days ago for the very first time ever.
I wasn’t sure if I’d do it right, but I tried, anyway.
Can you believe the stores are out of bread flour? Apparently, a lot of people have been baking up a storm, being locked down at home because of Covid-19.
Good thing, our good neighbor who gave us the banana bread bought a sack of bread flour so we bought some from him.
Well, that was our plan, but after he left 5 lbs. of bread flour at our door, he didn’t want us to pay him back. Bless his heart.
The recipe is for 20 to 24 rolls. Mine only made 16. I think because some of my rolls were bigger than the others.
I don’t have a kitchen scale which would have been helpful to make the rolls all in the same sizes.
But they still turned out good and tasted like the Pan de Coco that I knew. 🙂
These rolls are filled with coconut flakes or desiccated coconut which is why they’re called coconut bread.
I don’t think our neighbors had had them before so, I gave them some. And he said they were wonderful and delicious. That was great to know! They were a hit with the Hubs, too for he loves anything with coconut in it.
