I have always loved and enjoyed roasted vegetables as my side dish. They are quick and easy to prepare and yet so healthy and delicious.
Roasted sweet potatoes are one of my favorites. I love the little bit of sweetness that the potatoes bring.
It’s a good thing that they have cubed sweet potatoes that are sold in packs at the supermarkets because, to be honest, cutting sweet potatoes is definitely not the easiest for me, so I take the easy way out.
The only thing about these sweet potatoes in packs is that they are not evenly cut. Some are bigger than the others. Thus, some cooked more than the others.
If you can see in the picture, some look burnt, although, trust me, they were still good and edible. 🙂
But you can always choose to buy sweet potatoes and cut them yourself; whichever way you prefer. The packs are just convenient for me and saves me time especially when I also have the main dish to prepare.
Here’s how I prepare them just in case you want to give roasted sweet potatoes a try.
Ingredients:
- 1 pack (1 lb) of cubed sweet potatoes (or you can buy a pound of sweet potatoes and cut them yourself into 1/2 inch pieces)
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/8 teaspoon ground pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon ground cumin
- 1/4 teaspoon garlic powder
Instructions:
- Preheat oven to 425 degrees Fahrenheit.
- Line sheet pan with aluminum foil.
- Add the sweet potatoes to the pan and drizzle with olive oil.
- Sprinkle the sweet potatoes with all the seasonings then toss to coat.
- Spread out the sweet potatoes on the sheet pan in an even layer.
- Bake for 30-35 minutes.
- Enjoy!
