I do meal planning weekly. And I browse the world wide web for new recipes to try. Then I came across this Filipino dish, Pork Hamonado. I have eaten this before back in my hometown, but I hadn’t tried preparing it yet. So I decided to add it to the menu for the week.
Pork Hamonado is so easy to prepare with little ingredients. I am all about easy and quick to prepare recipes using few ingredients. They are my choice of dishes, especially when life’s a little hectic.
But when I have all the time and the craving, I don’t mind preparing an elaborate dish. But for this night, I opted for this.
Here’s the recipe for you to try. I tweaked the original recipe because it called for a lot of pork. There’s only three of us here so I didn’t want to prepare a lot.
Ingredients:
- 1 lb. pork butt, cute into bite size pieces
- 2 cups pineapple juice
- 1 can 20 oz. pineapple chunks
- 3 tbsp. low-sodium soy sauce
- 5 tbsp. brown sugar
- 3 tbsp. olive oil
- 1 cup beef broth
Instructions:
- In a large bowl, mix pineapple juice, brown sugar and soy sauce.
- Add pork into the mixture and marinate for an hour.
- Heat oil in pan in medium-high heat.
- Add pork without the marinade and cook until brown (at least 5 minutes).
- Add the marinade mixture, pineapple chunks and beef broth, and simmer until pork is tender (about 45-60 minutes). Add more broth if necessary.
- Add salt and pepper to taste.
- Serve with rice.
- Enjoy!
This dish was husband-and-teen-son approved. These two boys of mine can be picky so when they liked it, you better believe it’s good. 🙂
