Tortang Giniling, or Ground Meat Omelette, is one of my favorite Filipino dishes. We usually have this for breakfast. And of course, paired with rice.
I decided to make some again a few days ago after seeing omelette ideas on the web. Thing is, when I made this back in my hometown before, I didn’t add peas and carrots. But since I had leftover peas and carrots in the fridge, I decided to add them and I couldn’t be any happier; it turned out delicious!
I also thought that using an egg ring would make this omelette have the perfect round shape. I just bought me an egg ring so I’m going to use it next time I make these omelettes. But regardless of the shape, it would still be good. It’ll just look cuter or prettier, I think, if they’re more rounded. 🙂
Here’s how I did these omelettes if you want to give them a try, too. You can also use ground beef in lieu of ground pork if you want, or perhaps mix them both.
Ingredients:
- 1/2 lb. ground pork
- 4 eggs, beaten
- 3 tsps. olive oil
- 1 medium-sized onion, chopped
- 2 tsps. garlic, minced
- 8 pcs. cherry tomatoes, quartered
- 1/2 cup frozen peas & carrots
- 1-1/4 tsps. salt
- 1/8 tsp. ground black pepper
Instructions:
- Heat 2 tablespoons of olive oil in skillet in medium heat.
- Add onion, garlic and tomatoes. Saute until onion is translucent.
- Add the ground pork and cook for 10 minutes or until pork is brown.
- Add frozen peas and carrots, and cook for 5 minutes.
- Add salt and pepper and stir. Then transfer the mixture to a bowl and let it cool.
- When the ground pork mixture is already cool, add in the eggs and mix.
- Heat a non-stick skillet and add 1 tbsp. olive oil.
- Scoop 1/3 of the mixture and pour into the pan, and cook for 3 minutes on each side or until egg is cooked. Do the same step until the mixture is all consumed.
- Serve with rice.
- Enjoy!
I love the colors that the peas and carrots made.
