I always make sure to have a vegetable side dish with every meal and this roasted broccoli and cauliflower with Parmesan is one of mine and my husband’s favorites to have. I have to prepare a combination of these two vegetables because my husband is not a fan of broccoli at all. He prefers cauliflower. I love both.
Now, if only my son would love them, too. In the future, maybe? I too didn’t like vegetables when I was younger so I would like to believe that he would eventually enjoy vegetables like me now. I’m still keeping my fingers crossed.
Here are the broccoli and cauliflower florets before they got roasted.

Ingredients:
- 1 pack (12 oz) broccoli cauliflower medley/florets
- extra virgin olive oil
- 2 cloves garlic, minced
- 3/4 cup Parmesan cheese, grated
- 1/8 tsp. salt
- 1/8 tsp. pepper
Instructions:
- Preheat oven to 450°F.
- Wash vegetables and pat dry with paper towel.
- Place broccoli and cauliflower in a bowl. Add in enough olive oil to coat florets evenly.
- Add garlic and cheese, and toss.
- Line baking sheet with parchment paper and spread florets evenly.
- Season with salt and pepper.
- Roast for 15-20 minutes.
- Serve!
Here’s a trick so the parchment paper will stay in place. Spray the baking sheet with oil before placing the parchment paper. I learned that trick somewhere before and I have been doing it since then.
I used to just season the broccoli and cauliflower with salt and pepper which is also good. But after getting the idea of adding Parmesan cheese, I never looked back. The cheese definitely makes it more flavorful.
