Roasted butternut squash is one of my favorite side dishes. It’s healthy and, not to mention, so delicious. My husband likes it, too. It reminds him of his childhood dinners prepared by his mom and his maternal grandmother, though they did it the old style country way, not roasted but covered in corn meal, deep fried in a cast iron pan with oil.
We usually have it with either beef, pork or chicken. And with steamed brown rice as another side for our son and I, as well. The hubs likes having rice, too but he would prefer mashed potatoes if he has some available; just more of his nostalgia for the ol’ style country way of his youth.

I’m just glad that they have butternut squash already peeled and cubed being sold in the supermarket. That makes it so much easier to prepare. I don’t mind peeling it if I have to, but if I can save time not peeling it, all the better.

Here is how I prepared it.
Ingredients:
- 1 lb. butternut squash (I bought the ones that are sold in containers in the supermarket that are already peeled and cubed)
- Olive oil
- Salt
- Pepper
Instructions:
- Preheat the oven to 400 degrees F.
- Line a baking sheet with parchment paper.
- Place the butternut squash on the baking sheet.
- Drizzle with olive oil and toss. Make sure every piece is covered.
- Season with salt and pepper.
- Roast for 30 to 35 minutes.
- Serve!

See how easy that is to prepare? You got to love it when it’s done like that. So perfect for those hectic days or nights wherein you still want to eat good and healthier, but minus all the elaborate preparation. But I don’t mind preparing elaborate dishes. That is, if I’m not busy and if I’m in the mood to do it. 🙂

I liked butternut squash in a dish that I bought in the freezer section. But they discontinued it. I tried making it from frozen and needless to say it was awful. I’ll have to try it roasted.
