First, there was our wedding anniversary. Then came Valentine’s Day. And for the last celebration of the month…the hubs birthday!
And all he ever wanted to eat was Mexican food. Enchiladas to be precise. It is his most favorite Mexican dish.
We just had the food delivered using our favorite food delivery app because we are all into just staying in and enjoying the comfort of home. And it truly doesn’t get any better than that.
Enchiladas
This was a combination of beef, chicken, cheese and bean enchiladas which were topped with cheese, lettuce, tomato and sour cream. The birthday man actually just wanted beef and we specified it in the order but unfortunately, they overlooked the note.
The hubs, being who he is, can’t help but compare, and complain, about current and past foods he has enjoyed. When it comes to Mexican restaurants, he has fond memories of one which was located right next door to the Putt Putt Golf and Games location he was manager of back in the early 80s. Fiesta Cantina was the name of the restaurant and he loved their enchiladas and has looked forever to find the same quality and taste again, with no success. However, he still enjoyed his birthday choice.
Super Fajita Quesadilla
This tortilla was stuffed with cheese and steak and was cooked with bell peppers, onions and tomatoes. When it comes to Mexican food, this is my choice almost always.
Fiesta Nachos
Our son’s choice. See all the toppings? There were grilled chicken, steak, pico de gallo, jalapenos, lettuce, and sour cream, along with shredded Monterey Jack, cheddar, Asedero and queso quesadilla cheeses with an added cheese dip.
Choriquezo
Our son also ordered this. They also sent us chips so he dipped them in this. It is roast Mexican sausage with cheese dip.
There you have it! The hubs’ Mexican birthday dinner. And he was a happy birthday camper. 🙂
