I love using my slow cooker and we love having pot roast. It’s one of our favorites to have, especially during the cold months. There’s just something about having this dish when the weather is cold.

I have tried a few different pot roast recipes before, but after trying this slow cooker pot roast recipe that I came across on TikTok, I never looked back. This is absolutely the best slow cooker pot roast recipe that I have ever tried.

I already lost track of how many times I have prepared this dish. I just realized I haven’t shared it here on the blog yet, so here you go.

My son and I always have this with steamed jasmine rice. My husband, on the other hand, is fine with it on its own because it already has potatoes in it, speaking to his Irish roots. But he also has fond memories of the pot roast his late Mama prepared. The only thing missing is dressing, but he loves my version as well.

I did tweak the recipe a little bit. The recipe that I followed used celery, but I decided to use potatoes instead. And I just use a can of beef broth instead of two cups. I also prefer using baby carrots. It’s what I always use in any of my cooking involving carrots. You can definitely choose whichever kind you like.

One of the things that I love about using the slow cooker is that the meat always comes out super tender. And the vegetables came out perfectly tender as well.
