A sheet pan dish is definitely one of the perfect meals to make when you don’t have the time and energy to prepare an elaborate meal. It is easy with very few ingredients, and not to mention, an easy cleanup. You just have to cover the sheet pan with aluminum foil, toss the foil afterwards and you have a clean sheet pan without having to do any washing.
I came across this sheet pan chicken fajitas recipe on TikTok. We love Mexican food over here so I put it on the menu for the week immediately as soon as I saw it.
We are also fans of chicken. And my son is the biggest fan of chicken amongst all of us. That’s why there is always a chicken dish or two on the menu every week.
We have favorite chicken dishes that we like to have almost regularly but we are also open into trying new chicken dishes. So whenever I came across a chicken dish online that looks good, I always give it a try. Sometimes it’s husband-and-son approved, but sometimes it’s not. And I’m totally okay with it.
This dish is delicious and I must say, healthy, too.
I used chicken breast that I cut into bite-size pieces, added onions, green bell peppers, corn and all the seasonings. Then I topped it with Mexican blend cheese before taking it out of the oven.
Doesn’t that look good? Trust me, it was good.
I have followed a lot of recipes that I found on TikTok, but I only share the ones that we really enjoyed here on the blog.
