I had never tasted kale until I got here in the U.S. I don’t even know if we have it in my home country. But since I got to try it, I really like it. I didn’t get to document the other kale recipes that I’ve tried here after my arrival so I didn’t get to share them here on the blog.
There was one that I’ve tried and it was scallops with kale, and it was really good. The price of scallops now is very expensive for my liking so, we’ll see when I’m going to prepare it again.
I also had kale as appetizer in one of our favorite restaurants here in the city and it was really delicious. Wish I knew their recipe.
Recently, I came across a simple sautéed kale recipe and I realized, I hadn’t had kale in a while. So I made my own version of it and here it is. Our main dish was breaded pork chops and this was our side dish plus steamed brown rice.
This is such a quick and easy to prepare side dish. Below is the recipe if you want to give it a try yourself.
Ingredients:
- 1 bunch kale
- 2 tablespoons extra virgin olive oil
- 3 cloves garlic, chopped
- 1 lemon
- salt and pepper to taste
Instructions:
- Remove the kale leaves from the stems and chop.
- In medium heat, heat olive oil in pan.
- Add kale and stir for a minute.
- Add garlic and season with salt and pepper, and toss until kale is wilted.
- Sprinkle the kale with lemon juice and toss a few times.
- Serve and enjoy!
I loved how this dish turned out. So simple yet so healthy and fulfilling.
