In my Currently post for March, I mentioned that I recently discovered a Filipino food truck and promised to share more about it. So here you go!
I was definitely over the moon excited after learning about it and sent my husband immediately to get me the one thing that I was craving so badly from their menu, Pancit Bihon. The truck is located less than 2 miles from where we live which is perfect. That said, the hubs was back in a jiffy.
Pancit Bihon
Pancit Bihon is rice noodles with cabbage, carrots and celery. And they top theirs with pork cracklings which was a delightful surprise.
Lumpia
Lumpia is a Filipino spring roll that is filled with ground pork, carrots, celery and onion.
Annatto Rice
It was actually the first time that I’ve had annatto rice. It is jasmine rice with garlic and annatto.
Chicken Inasal
I had this on my son’s birthday. Chicken Inasal is grilled chicken that is marinated in lemongrass, ginger, vinegar and annatto. It came with a sauce and pickled cucumbers.
Grilled Pork Belly
The hubs’ order. The pork belly was marinated and it came with a sauce and pickled cucumber as well.
Suman
Suman is a rice cake that is made from glutinous rice cooked in coconut milk and often wrapped in banana leaves. It came with sugar which you sprinkled on top. You can have this for either snack or dessert. It was not on their regular menu so I was surprised when the guy asked me if I wanted Suman.
Every single thing that we have eaten from this Filipino food truck was delicious. I haven’t tried everything yet but it’s on my agenda because I have no doubt everything they offer would certainly satisfy my palate.

Food trucks are amzing for sure and I seriously wnat to start my own! It would be increadible and you can move to the business too versus a free standing retsaurant. This food truck is creatig some delicious looking dishes! YUM!

I have had Filipino food (so many veg options in this cuisine) and love it.. it has a lot of parallels with Indian cuisine as well

These are all comfort foods! I would down those except for the suman (rice) 😀 I miss Pinoy food!
