Roasted yellow squash is one of my favorite side dishes. It’s one of the hubs’ favorites, too. It’s delicious, healthy and so easy to prepare.

I usually just cook one piece of yellow squash. It’s more than enough for us since aside from meat, I also have rice with it and the hubs has potatoes.

Here’s the simple recipe that I use all the time in case you want to give it a try yourself.
Ingredients:
- 1 yellow squash
- 2 tablespoons avocado oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Instructions:
- Preheat oven to 400 degrees Fahrenheit.
- Line baking sheet with parchment paper.
- Wash yellow squash and slice into thin rounds.
- In a Ziploc bag, combine avocado oil, Italian seasoning, garlic powder, salt and pepper.
- Place yellow squash inside bag and make sure every piece is well coated with the mixture.
- Place yellow squash onto baking sheet with parchment paper.
- Bake for about 15 to 17 minutes.
- Enjoy!

My grandma used to make this side dish when I was little. It was always so good. I think she would fry them in oil but now with an air fryer. No need for all the grease.
