Being born and raised in the South, my husband grew up enjoying all the Southern dishes that his Mama prepared for him. He would sometimes crave for those dishes and, one day, he specifically requested for Southern fried yellow squash.
I usually just stir-fry or roast the yellow squash but I was also eager to try the Southern fried yellow squash so I gave in to the hubs’ request.
I came across a recipe online but tweaked it a little bit. The one that I found only needed salt as seasoning. When I told the hubs about it, he said to add ground pepper, too. But guess what? I decided to add garlic powder as well. Below was how I prepared the dish.
Ingredients:
- 1 yellow squash
- 1/2 cup cornmeal
- Garlic powder
- Salt
- Ground pepper
- Avocado oil
Instructions:
- Wash yellow squash and cut into 1/4-inch slices. Place in a ziploc bag.
- Add avocado oil into ziploc bag enough to coat the yellow squash. Then season generously with garlic powder, salt and pepper. Then add cornmeal and make sure all yellow squash slices are well coated.
- Heat oil in pan. Then fry yellow squash slices until they are golden brown. Drain on paper towels.
- Enjoy!
I have always loved yellow squash and I actually enjoyed the Southern fried version. Love the fact that it is so easy to prepare as well.
We had it as side dish for some seared cube steak (another hubby favorite) and I had some steamed brown rice with it, too, while the hubs had mashed potatoes. Since arriving here in the U.S., I’ve learned other recipes of his Mama, such as Southern fried chicken and fried pork chops. And other than squash, the hubs also loves Southern fried okra which I’ve also prepared. So now, am I not only a southern Filipina girl with an American citizenship, I’ve also learned how to be an American southern cook much to my hubby’s delight!
