Zucchini is one of my favorite vegetables, as well as my hubby, though sometimes he likes it prepared the old-style way of the pan fried Southern way like the squash and okra his Mama once cooked for him that he grew up enjoying.
I can prepare zucchini together with any kind of protein like chicken, pork or beef in a stir-fry dish or make a simple side dish out of it like sautéed or this roasted zucchini.

We usually have this with chicken or beef plus steamed brown rice for me and mashed potatoes for the hubs. He does prefer to have steamed brown rice sometimes instead of mashed potatoes.
What I love about this side dish is it so good and yet it is so quick and easy to prepare with very few ingredients. Here’s how I prepared mine but you can season it with additional seasonings or season it differently, however you prefer. It is that easy. No need to be a Chef to prepare this dish.
Ingredients:
- 1 zucchini, sliced and cut into half-moon slices
- Avocado oil
- Italian seasoning
- garlic powder
- salt
- pepper
Instructions:
- Preheat oven to 425 degrees F.
- Line baking sheet with parchment paper and spread zucchini evenly on the sheet.
- Drizzle zucchini with avocado oil then sprinkle generously with all the seasonings.
- Toss the zucchini until well coated then spread evenly on the sheet again.
- Roast for 15 to 20 minutes.
- Enjoy!
Don’t they look good? Trust me, they were as delicious as they looked.
