Most of the times, I eat steel oats for breakfast with almond milk and a little sugar. But when I do feel like having something else, this is one of my favorites to prepare other than the sunny-side-up egg with baby spinach and arugula.
That’s exactly why I always have grape tomatoes, spinach and cheese in the fridge. I make sure not to run out of them so that when my craving for this omelet strikes, then I can just grab them and not have to run to the grocery store to pick the ingredients up.
I never skip breakfast because I do believe that it’s the most important meal of the day. I make sure my husband and son doesn’t skip breakfast too. We sure are team-breakfast over here. 🙂
And it’s always a win win when the dish is so quick and easy to prepare and yet super healthy.
My plate doesn’t usually look as pretty as this, but I just had fun playing with the tomatoes one day and arranged them like that. 🙂
Here’s the recipe for you to try if you like a healthy and easy recipe for breakfast. You may add ground pepper too if you like. I prefer mine without because it’s already so tasty for me.
Ingredients:
- 2 eggs
- 1/8 teaspoon salt
- 1 tablespoon olive oil
- 1 cup baby spinach
- 1/3 cup shredded cheddar cheese
- 9 pieces grape tomatoes (or a handful for me)
Instructions:
- Beat eggs and add salt.
- Heat olive oil in pan.
- Add spinach and cook until wilted.
- Add tomatoes and cook for 3 minutes.
- Add eggs and stir.
- Add cheese and stir until eggs are cooked.
- Serve hot.
- Enjoy!
I usually eat mine with steamed brown rice and paired with a glass of water.

I love arugula. Last summer I grew a micro wasabi arugula that was incredible. This is one of my favorite go-to breakfasts too. I like mine with goat cheese.
