We are team breakfast over here. We make sure not to miss breakfast every single day. For me, it’s the most important meal of the day.
Other than just having steel cut oats with almond milk sometimes, I have my favorite breakfast dishes like the sunny-side-up egg with baby spinach and arugula or the spinach and cheese omelet.
My son also has his favorites and one of them is spam and eggs. Yes, spam, not ham, as in ham and eggs, an American standard. But I like this too.
I actually created this recipe out of the blue. I saw the can of spam in the kitchen cabinet and I asked myself how can I make something out of it and make it a little tastier.
So I thought of adding eggs and cheese. And it was delicious.
Back in my hometown, I remember preparing this but I used luncheon meat instead of spam. And I didn’t add cheese. It was good too actually, but the cheese really makes this dish yummier.
And yes, you can actually use luncheon meat for this recipe instead of spam.
Here’s what I did if you would like to try making it too.
Ingredients:
- 1 (12 oz.) can low-sodium spam, cubed into at least 1/2 inch portions
- 3 large eggs, beaten
- 1/8 teaspoon salt
- a handful of sharp cheddar cheese, shredded
- 2 tablespoons olive oil
Instructions:
- Beat eggs and add salt. Set aside.
- Heat oil in skillet over medium heat.
- Add spam in skillet and cook until brown.
- Pour in eggs over spam. Stir until eggs are done.
- Add cheese and stir until melted.
- Enjoy!
It’s that simple to make and is ready in minutes. This breakfast dish is perfect for those busy mornings.

I have had a dish using spam and it was better than I expected for canned meat. I tend to shy away because I don’t like all of the preservatives. But next time you have this dish, saute onions and spam in a skillet. Cook eggs in a separate dish. Then make 2-3 cups of white rice. Combine all the ingredients together and add garlic powder to taste. I prefer to add some garlic powder and then use garlic salt as desired.
