Like I mentioned in my ‘A Look Back at 2020‘ post, I’m making a post to summarize all the breads that I baked last year. 2020 was the year of baking up a storm for me. LOL.
And it was definitely satisfying because there’s nothing more delicious than the taste and smell of freshly baked bread.
My son gifted me a stand mixer on Mother’s Day and that made making the dough even more easier. I didn’t even have to knead the dough even if the recipe called for it. And all the bread turned out good.
1) Homemade Sourdough Bread
Sourdough bread was the first bread that I baked ever. And I got into it after our neighbor gave me a jar of starter. I was a little anxious about baking bread for the first time, but the recipe seemed easy so I tried it and it was a success.
2) Pan de Coco (Coconut Bread)
After realizing that baking bread is not that hard after all, I decided to make one of my favorite Filipino breads, the Pan de Coco and I loved it.
3) Filipino Cheese Bread
Then my love for baking bread continued. I’d already got the hang of it by this time and wasn’t intimated in using my stand-up mixer anymore. I made another favorite Filipino bread which is the Filipino Cheese Bread. I have always loved cheese in my bread.
4) Pandesal (Filipino Bread Rolls)

Pandesal is perhaps the most popular Filipino bread of all. We always have it with our coffee early in the morning before having our breakfast. And we could always get it freshly baked early in the morning from our local bakeries.
5) Sweet Cheese Rolls
I saw my favorite Filipino actress bake these on her Instagram stories and it made me drool. So it was the next on my list.

Here’s another one of my favorites, Ensaymada. And the more cheese, the better, of course.
7) Filipino Spanish Bread
This one has a sweet filling which makes it so good. I have always enjoyed bread with sweet fillings.
I actually also baked a no yeast bread during the time when there was no yeast to be found at the supermarket. Everyone was baking up a storm while quarantining and the stores were out of yeast and flour! But although it tasted like bread, it was a little hard.
