Pancit Palabok is one of the Filipino noodle dishes that we really enjoy. But I’ll admit, I’d never tried preparing it before. Back in my hometown, we’d just go to this restaurant that makes the most delicious Pancit Palabok.
But me and my son had been craving for it so I finally decided to check for a recipe online and order the ingredients that I needed from an online Filipino store. I would have never thought that it would be possible to prepare this dish here in the U.S. until my friend told me that an online Filipino store offers the ingredients.
They add food coloring to the dish to make it look like this. What we had back home was always yellow, but this was the result of the ingredients offered by the online Filipino store.
I also did not include all the toppings that the recipe that I found online called for. But it is still delicious and my son and I really enjoyed it.
This is such a hearty dish that is so easy to make. I’m sharing the recipe below just in case you want to give it a try too.
Ingredients:
- 1 lb. rice noodles
- 3 eggs, hard boiled and halved
- 1/2 lb. ground pork
- 3 tbsp. oil
- 3 cloves garlic, minced
- 1 medium onion, chopped
- 3 tbsp. fish sauce
- 4 cups water
- 1/2 cup flour (dissolved in 1 cup water)
- 1 pork cube
- 1 tsp. ground pepper
- 1-1/2 tbsp. annatto powder (diluted in 3 cups of water)
Instructions:
- Soak the rice noodles in water for 15 minutes. Drain and set aside.
- Heat oil in pan and saute garlic and onion.
- Add the ground pork and cook until brown.
- Add fish sauce and cook for 10 minutes.
- Add the annatto mixture.
- Add the pork bouillon and simmer until it boils.
- Add the flour mixture and stir until the sauces thickens.
- Season with pepper.
- Mix-in the noodles to the sauce until coated.
- Transfer to a serving dish.
- Top with hard boiled eggs.
You can also add other toppings like boiled shrimp, crushed pork rind, chopped spring onion, smoked fish and sliced lemons.
I made this a few weeks ago and it’s about time to make one again.

This sounds like an interesting dish to try. I’m not so sure my kids would like it but I wouldn’t find giving it a taste. I like that you can customize it too.
