Pork Binagoongan or Bingagoongang Baboy is only one of my many favorite Filipino dishes. Just talking about it now and seeing all these images is actually making my mouth water. 🙂
This dish is so easy to make and with very few ingredients at that.
Except for the sauteed shrimp paste that is to be bought from an Asian store either online or near you, the rest of the ingredients can be found at US supermarkets.
The shrimp paste has a salty taste to it, thus, this dish is on the salty side. Although there are some who would add sugar to it to lessen the saltiness, I prefer it salty so I skip adding sugar.
I remember back in my hometown, whenever I prepared this dish, I had to prepare another dish for my father. This dish is not good for him because of its high sodium content and he has high-blood pressure.
And my husband has to have a low-sodium diet, too, so when I prepared this dish a few days ago, he only had a bite. Literally just a bite. He liked it and wanted more, but I refrained him from doing so, much to his dismay; he loves salt! 🙂
So anyway, here’s the recipe for you to try.
Ingredients:
- 2 tbsp. olive oil
- 1 lb. pork butt, cut into bite pieces
- 2 tsp. garlic, minced
- 1 small red onion, chopped
- 10 grape tomatoes, halved
- 1/2 cup sauteed shrimp paste (ginisang bagoong)
- 1 cup water
- 3 tsp. white vinegar
- salt and pepper to taste
Instructions:
- Heat oil in a large pan.
- Add pork and fry until brown.
- Push pork to the side of the pan.
- Add garlic and cook until golden brown.
- Add onions and cook until translucent.
- Add tomatoes and shrimp paste.
- Mix everything in the pan until pork is coated with the sauteed shrimp paste and simmer for 1 minute.
- Add the vinegar and simmer for 1 minute, don’t stir.
- Add water, stir and simmer for 20 minutes over medium-low heat until pork is tender.
- Season with salt and pepper.
- Serve with rice.

Yum. This looks delicious. I have high blood pressure so it’s off the table for me. Unless I can find a way to reduce the salt content.
