In honor of the Flavor Your Life campaign, I prepared this Pasta alla Carbonara with Pancetta using ingredients that include Le Stagioni d’ Italia Extra Virgin Olive Oil.

I love a good pasta and this Pasta alla Carbonara with Pancetta was so good. I followed the recipe from flavor-your-life.com and here is the recipe for you to try.
Ingredients
- 1 pound (500g) rigatoni
- 2 Tbs Extra Virgin Olive Oil
- 1/4 pound of pancetta, diced
- 3 eggs, at room temperature
- 1 cup freshly grated pecorino Romano cheese
- Salt and pepper to taste
Instructions
- Cook pasta as directed by the package.
- Heat the Extra Virgin Olive Oil over medium heat in a large sauté pan. Add the pancetta and cook until golden brown and crispy. Remove from pan and set aside.
- In a mixing bowl, whisk together the eggs, cheese, and freshly ground pepper. Set aside.
- Drain pasta and transfer to a large sauté pan previously heated over medium heat.
- Add the pancetta to the pan and toss until well mixed.
- Remove the pan from the heat and add the egg and cheese mixture. Toss thoroughly until everything is well coated with the sauce.
- Serve warm.
I have always used 100% extra virgin olive oil in my cooking because I believe in its benefits and here are some tidbits about 100% Extra Virgin Olive Oil.
- It is made through a process known as first cold pressed olive oil. It’s pressing olives to extract the oil without heat or chemicals.
- It is virtually free of acidity – below 0.8%.
- The oil won’t receive an Extra Virgin rating if the panel expert tasters don’t taste the signature fruity taste and harmonious balance.
- Suitable for baking and cooking because of its 400°F smoking point.
- Store in a dark and cool (around 57°F) place and should be used within six months after opening.
For me, using an authentic 100% Extra Virgin Olive Oil surely makes a big difference in a dish.
