Bok choy is one of my favorite vegetables. But we call it Pechay in the Philippines so, basically, I have never called it bok choy, and actually didn’t know it’s called bok choy until I got here in the U.S.
We usually have the bok choy in stews just like this Nilagang Baka (Filipino Beef Stew with Clear Broth) or sautées.
Recently, I came across a post on Instagram of somebody regrowing bok choy. I have never tried it before so I thought about giving it a try. I actually mentioned about this in my March Currently post. And as I said there, I’m going to share about its progress and here it is.
How I Did It
- I cut the bok choy leaves at the base leaving about 2 inches of the stalk.
- I filled a container with water and placed the stalk in, making it stand, having part of the base submerged in water.
- Watch it grow.
First Week
This is how it looked like after a week. I forgot to take a photo of it in the beginning, but you can just try to picture it out yourself without the leaves.
Second Week
Then here it is after two weeks. It was such a delight to watch it grow. I’m like a kid watching it and fascinated of how fast it was growing every single day.
I had to change the water a couple of times because it started to turn brown, and I rinsed the container as well. I also had to remove some of the stalks on the side as they became wilted.
Third Week
I waited for another week thinking it would grow more. Unfortunately, I was wrong. The leaves started to droop. I decided not to take a picture of it because it looked pitiful. That was a lesson learned, but it was a fun experience. And I will try my luck again next time. 🙂

That is so cool that you can regrow this vegetable easily. I wonder if you needed to use a bigger bowl or wrap roots in a paper towel. If you can get it to grow, It will save you so much money in the end. I’ve never heard of bok choy.

I enjoy learning about growing new plants fruits and veggies from what would normally become compost scrap or garbage. Instead you get to grow over and over again!

Oh, that’s interesting! I would love to grow some veggies in my balcony garden (UK) too 😍 Here in India, we are currently growing cabbages, cilantro, and tomatoes in our garden 🙂

As asian growing up in our household bokchoy and moringa is our common veggies. I miss home because of this i will definitely will plant this on our yard this summer.
