Their garden vegetable hash is one of the things that I always grab. I am talking about one of my favorite stores to shop at, Trader Joe’s. I shared about it on my Trader Joe’s Haul here before. I just love the different vegetables that are in it. There’s corn, cauliflower, zucchini, celery, bell pepper and yellow onion. And what came to mind when I first saw it on Trader Joe’s? Omelette!
The thought of an omelette brought back memories to the hubs for his Mama was always making them for his breakfast. His favorite was what they called their Spanish omelette, filled with onions and green pepper, topped off by salsa. That being so, he was excited by the idea of using this product to create a new version of June “Bug’s” omelette.
I have prepared this vegetable hash omelette countless times. That’s how much I love it. And I usually have it for breakfast paired with steamed rice. It is just so filling. And whenever I have leftovers, I have it for lunch as well.
Here’s how I prepared this easy yet so delicious omelette.
Ingredients:
- 1/2 lb. of Trader Joe’s Garden Vegetable Hash
- 4 large eggs, whisked
- 2 tbsp. olive oil
- 1/2 tsp. salt
- 1/4 tsp. pepper
- Trader Joe’s Everything But the Bagel Seasoning
Instructions:
- Whisk eggs in a bowl and season with salt and pepper.
- Heat olive oil in skillet on medium-high heat.
- Add garden vegetable hash and cook for 5 minutes.
- Season the hash with everything but the bagel seasoning.
- Pour whisked eggs to the hash.
- Cook until the bottom part is cooked then flip.
- Continue cooking until egg is fully cooked, about 2-3 minutes.
- Serve and enjoy!
I’m out of vegetable hash now so we need to go to Trader Joe’s again and grab me some and other goodies that I always get whenever we’re there. Don’t you just love Trader Joe’s?

This is my sons favorite way to eat a beaten egg. He calls it scrambled egg hash but it usually looks more like a quiche lol This look yummy!
