I browse TikTok multiple times a day and I’ve lost count of the many recipes that I’ve seen there, saved on my phone and tried. I actually have a slow cooker Pot Roast recipe that I also saw there that I’ve already prepared many times. It is just that good. It’s actually on the menu again this week. It’s that time of year again for that comforting delicious pot roast, right?

One time I came across this content creator’s salad video. I love a good salad so I checked her account and was drooling over all the recipes that she posted. She posts Vegan recipes and although I am not a Vegan, I do enjoy Vegan dishes.

I decided to try her Summer Pasta Salad recipe first. And here it is!

This bow tie pasta salad reminds me of the time when my husband was in the hospital due to a heart attack. I would eat at the cafeteria for lunch everyday and their bow tie pasta salad had became my favorite. They had it almost daily and it was what I always looked for as soon as I set foot in the cafeteria. It was so good.

This summer pasta salad has more ingredients that the one at the cafeteria, but they both have sun dried tomatoes which is one of the reasons why I wanted to prepare this summer pasta salad so bad.

Her recipe called for a grilled zucchini, red bell pepper and onion. I decided to roast mine and it was still good.

If you’re into pasta salads, you should give this one a try. Trust me, it is delicious! Thing is, my husband and son are not so much into pasta salad so I had most of it all to myself.
