Also known as Filipino Chicken Rice Soup, Arroz Caldo is of Chinese origin. It is like the Chinese congee but with chicken in it. This is one of my favorites and we usually have this for snack. But since it has rice, chicken and egg which basically makes it a complete meal, you can also have this either for breakfast, lunch or dinner.
Arroz Caldo is one of the Filipino dishes that I can prepare here in the U.S. without having trouble finding the ingredients since they are all easily available in the supermarkets. Unlike the Ginisang Sitaw or Sauteed String Beans which I’ve only cooked here once because of the unavailability of the sitaw or string beans at the local Asian store.
This dish is so simple and easy to make yet very filling.
And you can pair it with your favorite cheese toast just like what the husband did.

Arroz caldo is soooo good during rainy days. My husband loved it and we pair it with deep fried tofu dipped in a soy-vinegar dip.
