I was video chatting with my sister one day when she showed me a dinner that my niece prepared. And it was a tuna omelette. My hometown is the Tuna Capital of the Philippines, General Santos, known familiarly as GenSan, and we all love tuna and have eaten all kinds of tuna dishes growing up.
I liked the looks of what I saw, so I knew I had to try it, too. I asked my sister for the recipe and she gladly obliged. She found a recipe on TikTok and shared with me, and with some tweaks, here was the end product and it was delicious!
Here’s how I prepared it in case you love tuna and want to try the recipe as well.
Ingredients:
- 1 5 oz. can tuna
- 7 pieces grape tomatoes, quartered
- 5 cloves garlic, chopped
- 2 eggs, beaten
- 1 small yellow onion, chopped
- 1/2 cup Mexican blend cheese (but you can use any kind of cheese if you so desire)
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon paprika
- 4 tablespoons olive oil, divided
Instructions:
- Mix all the ingredients.
- Heat olive oil in medium-size pan on medium heat.
- Add mixture in pan and spread all over pan evenly.
- Cover pan and cook in low for 15 minutes.
- After 15 minutes, turn the pan upside down with a pizza pan on the other side to flip the mixture.
- Add olive oil in pan again and put back the mixture with the uncooked side facing the pan.
- Cover and cook in low for 10 minutes.
- Enjoy!
I actually prepared this dish again yesterday and had it for lunch and dinner. That’s how much I enjoyed this dish.
